Summer Season Salad
This salad is perfect for a light lunch or as a side dish at your next summer gathering. Enjoy the freshness and health benefits of these seasonal ingredients!
Salad Base:
4 cups mixed greens (arugula, spinach, kale)
1 cup cherry tomatoes, halved
1 cup cucumber, diced
1 cup strawberries, sliced
1 ripe avocado, diced
1/4 cup red onion, thinly sliced
1/4 cup fresh basil leaves, torn
Toppings:
1/4 cup crumbled feta cheese
1/4 cup toasted sunflower seeds
1/4 cup blueberries
1/4 cup sliced almonds
Dressing:
3 tablespoons extra virgin olive oil
2 tablespoons fresh lemon juice
1 tablespoon balsamic vinegar
1 teaspoon honey
1 clove garlic, minced
Salt and pepper to taste
Instructions:
In a large salad bowl, combine the mixed greens, cherry tomatoes, cucumber, strawberries, avocado, red onion, and basil leaves.
Sprinkle the feta cheese, sunflower seeds, blueberries, and sliced almonds over the salad.
In a small bowl, whisk together the olive oil, lemon juice, balsamic vinegar, honey, minced garlic, salt, and pepper until well combined.
Drizzle the dressing over the salad just before serving. Toss gently to ensure the salad is evenly coated with the dressing.
